Happy Tuesday! I originally had a deeper post planned for today, but it requires more thorough research than I realized. So in the meantime, today I thought I’d share a few links I’m loving in the nutrition and dietetics world.
Food
A recipe I’ve been loving lately: Almond Butter Baked Apples (Making Thyme for Health). It makes for a great snack/dessert!
And here’s a recipe I’m dying to try. Nothing beats good summer fruit! Peaches and Cream Ice Cream (Baked by an Introvert)
Anybody else love burrito bowls? Vegan Burrito Bowls with Crispy Tofu & Chipotle Sauce (Pumps & Iron)
Nutrition
Things to make you think: Snack Edition (@StreetSmartRD)

Speaking of sports, here’s an article from an RD-owned company that shows there is more than one way for RDs to work with athletes: Ultralight Backpacking Meal Planning Tips for Thru Hikers (Backcountry Foodie)
As I was thinking of post ideas for today, I considered writing about dietetic technicians. Turns out I actually did, almost exactly a year ago! What is a Dietetic Technician? (The Future RD)
Finally, I’ve been very concerned for all the international students in the US. Their status is in jeopardy due to the new rules by the U.S. Immigration and Customs Enforcement (ICE) that these students may lose their visas if their coursework is entirely online. I know the arguments behind this are complicated, but I worry for many of these students (and dietetic interns!) and the stress they face as they try figure out the fall semester. If you haven’t thought about signing this White House petition yet, I urge you to do so.
That’s it for now. As always, stay safe and stay hydrated.
Until next time,
Emmalee
